QUICK & EASY GRANOLA RECIPE

If you saw my recent blog post on how I am losing weight this month you will know that I trying hard to be as healthy as possible. I find breakfast recipes can be pretty tricky. I find breakfast can be a tricky one. I want something yummy, healthy and quick, but toast is definitely not the healthy option. This granola recipe of mine will take you no more than 20 minutes to make and cook. Prepare it on a Sunday evening and you are sorted for the working week ahead. I like to nibble at it by itself or add it to small bowl of natural greek yoghurt. This recipe is vegan, vegetarian, and super low in sugar. The only sugar is from the 6 dates. This recipe will be your go to granola recipe and you’ll never need to buy expensive sugary granola again because I can guarantee you will like your homemade version better.

INGREDIENTS

200g mixed nuts
Handful of coconut flakes
6 pitted dates
Half a cup of water
Coconut oil

METHOD

Nuts
•Blend your nuts in a food processor to a rough consistency of both small and big lumps. I use a mini food processor type thing that came as an attachment to our stick blender.
•Pour your blended nuts into a roasting tray.
Paste
•Scoop 1.5 tablespoons of coconut into a small pan on the lowest heat.
•Pop in your dates, ripping them open to check that they don’t have any stones inside.
•After about 3 minutes of gentle cooking of your dates, pour in your water.
•Take off the heat and leave to cool for a few minutes (so the oil isn’t too vicious).
•Use a stick blender to mix the dates, oil and water into a smooth light brown paste.
•Pour your paste over your blended nuts and sprinkle a handful of coconut flakes.
•Mix all of your ingredients together, making sure everything is slightly covered in the date paste.
•Make sure everything is spread out flat in your tray to ensure an even cook.
Cooking
•Pop your tray of granola in the oven at 160ºc and cook for 10 minutes (regularly checking and moving the granola about incase it burns).
•Take out and leave to cool after 10 minutes of cooking.
